Cool Cucumber Mint Salad

This Cool Cucumber Mint Salad goes so well with foods that have some heat. Serve it on the side with tandoori chicken, a Thai curry, a Moroccan tagine or even with a buffalo chicken pizza. I made it with my Curry Roasted Cauliflower and it cool your palate down perfectly from the hot spices.




Cool Cucumber Mint Salad

Serves 4


  • 4-5 Persian cucumbers (mini cucumbers), sliced thin

  • 2 green onions, finely chopped

  • 1 small clove garlic, minced

  • 1/4 fresh mint, roughly chopped

  • 1/4 teaspoon fresh lime zest

  • 1 tablespoon + 1 teaspoon fresh squeezed lime juice

  • 1/4 teaspoon sugar

  • 2 tablespoons extra virgin olive oil

  • Salt + pepper to taste


  1. Toss together cucumber, green onion, garlic and mint in large bowl.

  2. In small bowl, add lime zest, lime juice, sugar, salt, pepper and olive oil and whisk until combined. Be sure to double check your seasoning so that the dressing is nicely balanced.

  3. Just before serving, add dressing to the salad mixture and toss well to combine.

  4. Serve alongside spicy dishes to cool your palate perfectly.
